Tread lightly

The shiro (the underground mat) takes decades to build. Leave the pins, never dig or rake it, and brush the duff back over the hole. A patch can produce for a lifetime if you don't wreck it.

Finding it

Fall, mid-elevation Cascade and coastal pine/fir on well-drained sandy or pumice soil; candystick (Allotropa virgata) is a reliable indicator plant. Fruiting begins when soil temp drops below ~66°F. Read the duff for humps ('shiro'); the spicy cinnamon-pine aroma confirms.

Judging quality

Grade is all about the button. The prize is a tight, unopened cap with the veil still sealed over the gills (a '#1'): firm, heavy, aroma locked in. Once the cap opens and flattens, scent fades and value drops fast. It should feel hard and dense; soft or spongy means old or waterlogged. Sniff the base for the spicy cinnamon-pine punch. Weak aroma means poor grade or a lookalike. The cleanest, firmest ones are still half-buried in the shiro; brush them, don't wash.

ID & lookalikes

Toxic Amanita smithiana mimics matsutake and has poisoned foragers. It lacks the true spicy-pine smell and has a bulbous, differently-built base. Identify with care.

Licensing

USFS Siuslaw personal use ≤6 matsutake/day, no permit, but each must be cut in half lengthwise at harvest. Commercial matsutake permit $250/yr (apply Aug 5–25).

Catch rules

Cut in half lengthwise (USFS personal-use rule). Far too many are picked as immature pins; leave the young ones to open.

Preparation

Aroma is the whole point: brush clean (don't wash), slice thin, add late. Classic dobin-mushi (clear broth), matsutake gohan (rice), or seared dry with a squeeze of yuzu and a drop of soy.
